Cazuelas are glazed clay cooking dishes that may be used in the oven, on a grill, or in a microwave. They are also known as terracotta pans. (As they are delicate, we do not advise using them on the burner.) They come in a variety of sizes and forms, but are typically shallow and rounded. Compared to paella pans, a cazuela retains heat long after the heat source has been turned off, allowing the food to continue to cook. We use cazuelas for a variety of things, including tapas, baking vegetable gratins, and roasting chicken (which turns out juicy and wonderful). Additionally, they create excellent oven-cooked rice dishes from Spain that are served in them (arroz al horno).
